Reserve
Our flagship. The finest expression we produce — made to be tasted on its own merits.
The Leaf
Reserve leads with first-flush Longjing drawn from our highest-elevation gardens, on the Longjing–Jiukeng foundation. At altitude, cool mornings and lingering mountain mist slow the leaf and concentrate its sweetness; only the youngest top-of-shoot growth is taken, at the earliest pick of the spring. It is the most carefully selected lot in the range — the one in which the house style is at its most delicate.
Flavor Profile
A clean, brothy umami with a long, silky finish and almost no astringency. The sweetness is natural and lingering, the texture dense and smooth; whisked, it lifts to a fine, even foam over a vivid jade liquor. This is matcha to be poured straight and considered — layered, quiet, and complete.
In the Cup
Reserved for service where the matcha is the point: usucha, tasting menus, and premium lattes built to showcase character rather than mask it. Expressive enough to drink alone, refined enough to define a menu.
